I’m not sure I’m the best guy to go to for diet advice. But ever since my first article about my health issues (http://vernthehermit.com/2014/08/25/im-bringing-back-sexy/) several people (dozens actually) have written to me asking for meal ideas. I have tried to be diligent about taking photos of each and every meal I eat but I did miss a few.
I have also had a couple smoothies along the way as meal substitutes. I didn’t bother to take photos of those. If you’re interested in the smoothie recipe, just let me know.
I think all this would be boring to anyone other than me, but since so many have asked, here is a collection of those photos and descriptions.
Below these pictures is my weight, blood pressure and blood sugar chart. It’s kind of fun to see how what I ate the day before effects the blood sugar the next day. As you can see I started out at 315 (by the doctor’s scales and I am now 287 by my scales.. I believe my scales to read slightly less than the doctor’s)
Before eating this way, my blood sugars were about 170 fasting. My A1C was 8.9. In just four weeks, I have lowered my blood sugars substantially. My A1C (which is a 3 month average) went from 8.9 to 7.4. My life long heart condition (since birth) has required that I take medicines most of my life. Those medicines have injured my liver so I have a lot of work to do.
Below that chart is the recipe for our cheese “crackers”
I absolutely have to go on record and say… MY WIFE ROCKS! She has been the chef on everything here. Nothing came out of a box, a jar (except for pickles, olives, etc) and everything is fresh either from our garden or the market.

P.S. My “way of eating” (I refuse to call it a diet since this is a lifestyle change) is very complicated. Please read the story in the link above for more details before starting to give me advice. No offense, but I can’t handle much more advice from anyone at the moment. My email is literally flooded with folks with good intentions but little knowledge about my particular case. Unless you have to eat like I am, I really don’t want to hear that this food or that food is good for me or not good for me. I am under strict guidelines from my two doctors. I trust them completely and the proof is in my weight loss and my lab results.

- 8/23/2014 – Breakfast – Scrambled eggs with veggies; fresh strawberries and a 1/4 cup of cottage cheese
- 8/24/2014 – Breakfast – 2 to 3 egg omlet with pico de gallo inside with small provolone cheese; fresh fruit and a 1/4 cup of cottage cheese
- 8/24/2014 – Lunch – Chicken garden salad with thinned fat free dressing (sugar free); strawberries and blueberries; 1/4 cup of cottage cheese
- 8/24/2014 – Dinner – 6 ounces of grilled pork chop; aspargus and grilled pineapple
- 8/25/2014 – Breakfast – 3 egg veggie omlet… loaded with mushrooms; onions; peppers; etc – a couple ounces of breakfast pork chop; 1/5 cup of cottage cheese; some fresh peaches and blueberries
- 8/25/14 – Afternoon snack
- 8/25/2014 – Dinner – 6 ounces of pork; green beans with a very small bit of ham for flavoring; red bell peppers, onions, mushrooms and a side of jalapeños. Desert is going to be a small half cup of Honey Dew melon
- 8/25/2014 – Evening Snack – Fresh strawberries and blueberries; a piece of string cheese and some chicken broth
- 8/26/14 – Breakfast – Scrambled eggs with onions and red bell pepper; chopped jalapeno; lean smoked ham; pineapple; cottage cheese

- 8/26/14 – Snack – Mozzarella cheese balls and tomatoes. Topped with shredded coconut on lettuce
- 8/26/14 – Dinner – Grilled boneless chicken breast, topped with cheese, hot hatch peppers, mushrooms, red bell peppers, onions; pineapple and fresh jalapeno

- 8/27/14 – Lunch at a restaurant – I had to eat out and this was the only thing on the menu… smoked turkey and onions. Sugar free hot sauce on the side.

- 8/29/14 – Lunch – My wife rocks! She had a meeting and left this for me in the fridge… two chicken, jalapeno and cheese links; steamed veggies… broccoli, onions and red bell peppers; pineapple
- 8/30/14 – Breakfast – 3 egg omelet with all the usual stuff.. cheese, diced red bell peppers, onions and jalapenos; grilled breakfast size pork chop; strawberries and blueberries
- 8/30/14 – Dinner – Quick and dirty… 2 chicken sausage, cheese and jalapeno links; green onions; fresh pineapple; garden salad with tomatoes, mushrooms, green onion, small amount of cheese and sugar free dressing
- 8/31/14 – Breakfast – Scrambled eggs with all the usual stuff… jalapenos, onions; small breakfast sized grilled pork chop; fresh peaches
- 8/31/14 – Lunch – 2 chicken, cheese and jalapeno sausage links; aspargus; green onion; pineapple and jalapeno

- 9/12/14 – Dinner – Grilled cheese stuffed pork chops; asparagus and jalapeno
- 9/13/14 – Breakfast – Scrambled eggs with all the usual… tomatoes, onions, and jalapenos; goat cheese; sugar free sausage link; avocado slices and a jalapeno

My cheese “crackers” are pretty simple… We have tried it with slices of cheese and shredded cheese. The slices work much better.
On a baking sheet, lay out slices of Colby Jack cheese. We cut each slice into fourths since it is a better bite size.
Make a mixture of 1 part almond meal and 1 part grated Parmesan cheese. Sprinkle the mixture on the cheese slices . Make sure some of the mixture falls off the slices onto the baking sheet since the slices will melt slightly and nothing worse than cheese with no toppings. LOL
Then sprinkle your favorite seasoning on top. Mrs Dash; Cajun; chili or whatever.
Bake at 300 degrees for 10 to 12 minutes.
Let cool. Eat!
Almond meal?? I found the coconut flour. Still looking for almond flour. Where do I find meal?
